I find it very striking that although not all, for many of us, Poisers, we have problems with gluten ... something must be linked with POIS, I guess. but it does not happen to all of us ... but in a sufficient number to take it into account, I guess....

Yes, this started for me with gluten. When I turned 30 some gene or something suddenly turned on and from then on I couldn't handle gluten. Or maybe I did some damage to the digestive system somehow, like I had a really nasty food poisoning that lasted a week, a couple months before becoming gluten intolerant.
POIS feels like gluten symptoms, for me mostly brain-fog and sort of blurry vision. Other things feel similar to gluten, like potato, egg or milk. I just get worse every year that passes. When you can't handle gluten your digestive system becomes inflamed. After cutting gluten you. might be so inflamed that other stuff will irritate your GI tract too even though you would normally handle them.
If you lack enzymes, bile or stomach acid then you will get undigested food irritating your intestines. Gluten is a protein. I wonder if a lot of gluten intolerance is stomach acid deficiency. It seems stress can damage your stomach acid production.
Have you tried eating only meat for a day (with white sugar dissolved in water)? That should eliminate all GI irritation, unless you lack stomach acid - then you'll feel worse.
