This is interesting. I have also noticed that nocturnal emissions are likely to occur when I consume high calorie meals right before (or 3-4 hours prior) bedtime. I am a gym-goer and my routine is so packed up that I cannot go to the gym earlier in the day. I must schedule it in the evening (8 pm) and I must sleep within 1 am. I noticed that the high calorie shake that I take post workout has a great impact on the occurrence of NE's. When I keep my bedtime meals light or just skip them, I wake up refreshed the next day (that means no NE occurs that night). After reading your post, I can confirm that this is it. As you mentioned, gluten and dairy do affect this condition.
My meal-induced NE's are quite different from regular wet dreams. In case of regular wet dream, a full blown ejaculation occurs followed by a dream and I usually wake up immediately when it occurs. And in case of meal-induced NE, I ejaculate some "pre-cum"-like substance (or just pre-cum) minus the dream. I don't consider it as a full ejaculation but its physiological effects are as intense as what I call "full blown ejaculation".
This correlation has been observed by a few members in this forum. Maybe, this is how some people's body works. In Indian culture, nocturnal emission (swapnadosh / स्वप्नदोष) is believed to be caused by the "internal heat of the stomach". This may be purely hypothetical but not entirely false. Many yoga gurus who advocate the practice of semen retention advice eating light meals before bed to avoid NE.
